Freeze-dried strawberry yogurt bark

Frozen yogurt bark broken into pieces and topped with freeze-dried strawberries, raspberries and wild blueberries

This is the recipe we make when the kids want something sweet and we want something with real fruit in it. The freeze-dried berries stay crunchy right up until you eat it.

Makes: about 16 pieces · Prep: 10 minutes · Freeze: 3 hours

Ingredients

  • 2 cups plain Greek yogurt (2% or higher)
  • 2 to 3 tbsp honey or maple syrup
  • ½ tsp vanilla
  • 1 cup freeze-dried strawberries, lightly crushed
  • ¼ cup freeze-dried raspberries or wild blueberries

Steps

  1. Line a baking sheet with parchment paper.
  2. Stir the yogurt, honey and vanilla together.
  3. Spread it on the parchment about ½ inch thick.
  4. Scatter the freeze-dried fruit over the top and press it in lightly.
  5. Freeze for about 3 hours, until solid.
  6. Break it into pieces and keep it in a freezer bag in the freezer.

Tip: Add the freeze-dried fruit right before freezing. If it sits on the wet yogurt too long, it softens.
